(oder im Dampfgarer) Danach im kalten Wasser abschrecken und in 2cm d\u00fcnne Scheiben schneiden. Die Kartoffeln in der Schale kochen und sch\u00e4len.<br \/>Die Eier mit dem Parmesan und dem Hanfmehl oder den gesch\u00e4lten Hanfn\u00fcssen mischen.<br \/>In einer gro\u00dfen Pfanne etwas Raps\u00f6l erw\u00e4rmen und die Kohlrabischeiben salzen, in Mehl wenden, durch die Parmesanei \u2013 Mischung ziehen und backen.<br \/>Den Sauerrahm mit Salz, Pfeffer aus der M\u00fchle und den gehackten frischen Kr\u00e4uter vermischen. Die gesch\u00e4lten Kartoffeln halbieren und in der Butter schwenken.<br \/>Die Kohlrabischeiben auf K\u00fcchenkrepp abtropfen lassen, die Kartoffel anrichten die Kohlrabischeiben daneben legen und mit dem Sauerrahm dekorieren.
