je 3 Medaillons schneiden, salzen, in Mehl wenden, auf der Hautseite durch die verschlagenen Eier ziehen und in die ger\u00f6steten Hanfsamen dr\u00fccken. Die Erd\u00e4pfel in Zentimeter dicke Scheiben schneiden, Hanf\u00f6l erhitzen die Filetmedaillons auf der Panierseite zuerst anbraten, umdrehen und warm stellen. Im Bratensatz den in W\u00fcrfel geschnitten Bauchspeck zergehen lassen, die Zwiebel darin anschwitzen, die\u00a0 Erd\u00e4pfel mit anbraten, gut durchr\u00f6sten die gekochten Hanfnudel untermischen und w\u00fcrzen.
