Die Fische gut s\u00e4ubern, innen und au\u00dfen salzen. Butter und Milch aufkochen den Polenta mit dem Hanfmehl einr\u00fchren und salzen. Einmal aufkochen, und die Masse bei ausgeschaltetem Herd ca. 15 Minuten nachquellen lassen. Die Steinpilze putzen und klein schneiden. In Butter anr\u00f6sten bis das Wasser verdunstet ist, mit Salz, Pfeffer, Thymian w\u00fcrzen In die hei\u00dfe Biohanfpolenta den Sauerrahm und die Schwammerln einr\u00fchren. Die Fische im Mehl wenden\u00a0 in hei\u00dfen Raps\u00f6l beiderseitig anbraten und zur Seite stellen.<\/p><p>Die Biohanfpolenta mit nassen H\u00e4nden auf die angebratenen Fische dr\u00fccken, die Fische auf ein mit Raps\u00f6l eingefettetes Backblech legen. Damit die Polenta nicht austrocknet legen sie gefettete Alufolie \u00fcber die Fische geben sie sie f\u00fcr 15 Minuten ins Backrohr.<\/p><p>In der Zwischenzeit die Tomaten halbieren, den Strunk ausschneiden und nochmals vierteln. In der Butter anbraten, die H\u00e4lfte vom Oregano dazugeben und mit 400 ml Basissauce oder Wasser aufgie\u00dfen. Den Knoblauch hineindr\u00fccken und mit Salz und Pfeffer w\u00fcrzen. Die Sauce aufkochen und mit dem Stabmixer fein p\u00fcrieren.<\/p><p>Die Fische aus dem Rohr nehmen, auf ein Teller geben, die Tomatensauce durch ein Sieb passieren und mit dem Fisch anrichten.
