Das Wasser dazugeben. Beim\u00a0 Wasser sollte man aufpassen, denn Mehle sind von M\u00fchle zu M\u00fchle verschieden. Es empfiehlt sich nicht alles auf einmal\u00a0 dazuzugeben, sondern erst einmal die Konsistenz pr\u00fcfen und nach Bedarf nachgie\u00dfen.<\/p><p>Das Brot gut kneten, es sollte im inneren gleich wie au\u00dfen temperiert sein.<\/p><p>Das Brot in einer Brotform oder einer K\u00f6nigskuchenform bei 30 \u2013 35\u00b0 ca. 2-3 Stunden gehen lassen.<\/p><p>Das Backrohr auf 250\u00b0 vorheizen, das Brot auf ein befettetes Backblech geben und an der Oberseite im Hanfmehl w\u00e4lzen. Das Brot in den Ofen geben und eine Schale Wasser dazu stellen (Dampfentwicklung). Das Brot f\u00fcr 15 Minuten bei 190\u00b0 backen und danach 35 Minuten 160\u00b0 fertigbacken.
